Gazpacho comes from Spain. It was first made by running stale bread and olive oil through a mortar while adding as many fresh veggies as possible. These days, gazpacho means a cold soup made with fruit or vegetables, usually tomato. Cherry tomatoes are very tasty and go well with red bell peppers, black pepper, sea salt, balsamic vinegar, and olive oil in gazpacho. Simple and nice!

Now for a recipe from Eastern Europe: cold beet soup. This brightly colored soup is a treat in the summer and will make any dinner table stand out. The beets give it a bright pink color. Kefir or yogurt can add depth, and dill, lemon juice, and garlic can spice it up. Add some boiled egg and dill pickles, and you’re done!

This lovely, bright soup is so nice and cool! It could have green peas, courgettes, cucumbers, olive oil, vinegar, and maybe a little yogurt. It could also have parsley, garlic, mint, and yogurt. Just right! You can also add avocado to make it creamier if you want to.
Melon And Mint Soup That Tastes Great
There are many ways to make melon soup. You can use honeydew, cantaloupe, or even watermelon, and each has its own color. All of them go well with mint, but the other items let you be creative. A fresh taste can be found with honeydew, coconut, and lime juice. Orange juice and cantaloupe go well together. A lovely treat soup is made with watermelon, sparkling wine, ginger, and mint.
